 The most common shaped nut is hexagonal, for similar reasons as the bolt head - 6 sides give a good granularity of angles for a tool to approach from.

 Shear nuts are a permanent one way fixing. When tightened, the hex head is designed to shear off as torque is applied, leaving the threaded conical lower collar of the shear nut in position making these products permanent fixings.
